With the snow still in patches on the ground, it has made me not as anxious to get my indoor seeds started, but I am pushing through that and these are the seeds I chose to start for February that do well in our zone.

About a week ago I started:
Artichoke( green globe)
Oregano (common)
I am using the coco coir as the medium, I am using cardboard milk and egg cartons to plant in until I run out of those, after that I will be using the trays that I purchased last year, but trying to move away from plastic as much as possible and keep my costs down.
The seeds that I am most excited about in this batch are the artichokes, I have never grew them before, what I learned is that you start them in February indoors, after 6 weeks they need to move to a cooler but not to cool place, such as a greenhouse or garage for another 6 weeks and then they can be planted in the ground, this is if you want artichokes in the first year, they like sunny locations but may tolerate a little shade.
They are a perennial and should come back in zone 8B if they have enough mulch over them in the winter, one plant can produce more than one artichoke, their leaves are feathery and look Mediterranean and if you let it go to flower, it’s majestic tall and purple, so even if you don’t like artichokes they make great mid height border plants.
My ginger that I planted is coming up and the turmeric has started to root, so far I only have 1 calendula, but I am sure there will be more.
